Curry Turkey Salad, Healthy Holiday Leftovers

The big turkey day is over and I'm worn out. I cooked on and off for 3 days, I'm bloated from too much great food, and cleaned till my fingers are nubbins. Lining up at midnight for Black Friday? Hah! I'll leave that for the masses.

Speaking of masochism, how about dealing with all those leftovers? You probably have one or two more microwave sessions with your leftovers before you won't feel like eating it anymore. The best thing you can do is reinvent your leftovers into something completely different.

Reinventing does not mean more cooking, though. I'm sure you're exhausted from the holiday and the last thing you feel like doing is spending more time slaving in the kitchen. No, we need simple recipes that quickly re-engineer the flavors into something different.

One recipe that fits this criteria is a simple curry turkey salad. By using light ingredients along with indian spices, this makes for a quick and easy salad or sandwich that makes your leftover turkey taste great.

Curry Turkey Salad Recipe

Ingredients

2 tablespoons reduced-fat sour cream

2 tablespoons plain yogurt

1 tablespoon fresh lime juice

1 tablespoon honey

1 teaspoon curry powder

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 cups chopped cooked turkey

1 cup seedless red grapes, halved

1/2 cup diced celery

1/4 cup chopped red onion

2 tablespoons chopped pecans

Directions

Combine sour cream, yogurt, lime juice, honey, curry powder, salt, and pepper. Add turkey, grapes, celery, onion, and pecans. Stir to combine.
