Chipotle Ranch Chicken Lettuce Wraps | Nudge Quick & Low Carb

A low carb diet can be challenging when it comes to the amount of time it takes to prepare food. I'm currently trying to nudge low carb and good planning is definitely something required when you need to eat mostly non-processed foods. Fresh vegetables, non-processed meats and cheeses, and low carb condiments are required which can take alot of time without a strategy. I've learned that cooking in bulk is a great way to save time. If I'm grilling chicken, I grill a few pounds of it for the week. As soon as I bring home broccoli, cauliflower, cucumbers, etc., I cut them up into bite size and store them in ziptop bags for easy snacking or meal options. I also try to prepare low carb condiments and dips for the week.

One other thing I've found with eating low carb is that I eat alot of salads. Green salads are a good way to feel full and get plenty of vegetables, but in addition to the hassle of time it takes to chop up many fresh ingredients, there is something in my head that says, "Stop with all the salads, I need variety". Maybe it's just me, but I need a way to enjoy the same ingredients that aren't a big pile of chopped greens eaten with a fork. I've recently found that lettuce wraps are a great way to trick my head into feeling like I'm eating something more like a taco or wrap rather than another chopped salad. Call me crazy, but a different lettuce delivery system is a welcome change of pace.

Today's recipe is a good example of a simple lettuce wrap that can be thrown together quickly if you've done your weekly preparation of ingredients. It uses chicken that I grilled a a few days ago, a chipotle ranch dressing that I made for salads, and a couple of fresh ingredients that I put together in a few minutes.

Chipotle Ranch Chicken Lettuce Wraps

Ingredients

For Chipotle Ranch Sauce

1 cup light ranch dressing

1 small can chipotle peppers in adobo sauce (usually found in Mexican food section)

2 tsp freshly squeezed lime juice

For Lettuce Wraps

2 grilled chicken breasts chopped (I just seasoned with salt, pepper, and smoked paprika)

4 leaves romaine lettuce

1 tomato sliced thin

1 avocado sliced thin

1/2 orange bell pepper, diced

2 green onion shoots, diced

Directions

Mix 2 to 4 teaspoons adobo sauce from the can of chipotle peppers - be careful if you're sensitive to heat as it's very spicy. If you like even more spice like me, add 1 to 2 finely minced chipotle peppers in as well. Warm up your chicken in the microwave, then assemble chicken, tomato and avocado on leaves of romaine. Top with chipotle ranch dressing, bell pepper, and green onions.
